Vie, the flagship restaurant of Chef Paul Virant, honors his background of cooking seasonally, sourcing locally, and utilizing traditional methods of preservation to create a unique experience that leaves a lasting dining impression. The ever-changing farm-to-table menu of contemporary Midwestern cuisine offers guests the distinctive opportunity to enjoy local flavors and ingredients year-round, with thanks to frequent visits to the Green City Market and products from other nearby farmer friends and suppliers. At Vie, everything is made in-house, from the fresh breads to the charcuterie to the pickles and preserves.
